- Zucchini - 300 grams, grated
- Chickpea flour - 100 grams
- Cornstarch - 2 tablespoons
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons (for frying)
- Whole grain burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1/2, sliced
- Sriracha or your favorite sauce - to taste
Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture until the zucchini is relatively dry.
- In a mixing bowl, combine the grated zucchini, chickpea flour, cornstarch, garlic powder, onion powder, salt, black pepper, and chopped parsley. Mix until well combined.
- Form the mixture into burger-shaped patties, about 1.5 cm thick. You should have about 4 patties.
- Heat the olive oil in a non-stick skillet over medium heat. Once hot, add the zucchini patties and cook for about 4-5 minutes on each side, or until golden brown and crispy.
- While the patties are cooking, toast the whole grain burger buns until lightly browned.
- Assemble the burger by placing a lettuce leaf on the bottom half of each bun, followed by a zucchini fritter, sliced tomato, sliced avocado, and a drizzle of Sriracha or your preferred sauce. Top with the other half of the bun.
