  • Zucchini - 2 medium (about 300g)
  • Almond flour - 1/2 cup (50g)
  • Parmesan cheese - 1/4 cup, grated (25g)
  • Egg - 1 large
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil spray - as needed

Steps

  1. Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.
  2. Wash and dry the zucchinis, then cut them into fry shapes, about 1 cm thick.
  3. In a shallow bowl, combine the almond flour, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper.
  4. In another bowl, beat the egg until well mixed.
  5. Dip each zucchini fry first into the egg, allowing excess to drip off, then coat it in the almond flour mixture, pressing lightly to adhere.
  6. Place the coated zucchini fries on the prepared baking sheet in a single layer, making sure they do not touch.
  7. Lightly spray the fries with olive oil to enhance crispiness.
  8. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
  9. Remove from the oven and let cool slightly before serving.
