- Zucchini - 2 medium (about 300g)
- Almond flour - 1/2 cup (50g)
- Parmesan cheese - 1/4 cup, grated (25g)
- Egg - 1 large
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Paprika - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil spray - as needed
Steps
- Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.
- Wash and dry the zucchinis, then cut them into fry shapes, about 1 cm thick.
- In a shallow bowl, combine the almond flour, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper.
- In another bowl, beat the egg until well mixed.
- Dip each zucchini fry first into the egg, allowing excess to drip off, then coat it in the almond flour mixture, pressing lightly to adhere.
- Place the coated zucchini fries on the prepared baking sheet in a single layer, making sure they do not touch.
- Lightly spray the fries with olive oil to enhance crispiness.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy, flipping halfway through.
- Remove from the oven and let cool slightly before serving.
