- Zucchini - 250 grams, grated
- Chickpea flour - 100 grams
- Nori sheet - 1, finely chopped
- Cornstarch - 2 tablespoons
- Nutritional yeast - 2 tablespoons
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Paprika - 1 teaspoon
- Black salt - 1/2 teaspoon (or regular salt)
- Black pepper - 1/4 teaspoon
- Green onions - 2, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Water - 100 ml
- Oil for frying - as needed
Steps
- In a bowl, combine the grated zucchini with a pinch of salt and let it sit for about 10 minutes to draw out excess moisture.
- After 10 minutes, squeeze the zucchini in a clean kitchen towel to remove the moisture and place it back in the bowl.
- Add chickpea flour, cornstarch, chopped nori, nutritional yeast, garlic powder, onion powder, paprika, black salt, black pepper, green onions, and parsley to the bowl with the zucchini.
- Gradually add water to the mixture and stir until a thick batter forms. Adjust the consistency by adding more water or chickpea flour if needed.
- Heat oil in a non-stick skillet over medium heat. Once hot, drop spoonfuls of the batter into the skillet, flattening them slightly to form fritters.
- Cook for about 4-5 minutes on each side, or until golden brown and crispy. Remove from the skillet and place on a paper towel to drain excess oil.
- Serve warm with a dipping sauce of your choice, such as vegan tartar sauce or a spicy aioli.
