Ingredients

  • Zucchini - 200 grams, grated
  • Corn kernels - 150 grams (fresh or frozen)
  • Chickpea flour - 50 grams
  • Oats - 30 grams, finely ground
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for cooking)
  • Whole grain burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Avocado - 1/2, sliced

Steps

  1. In a large bowl, combine the grated zucchini and corn kernels. Mix well and let sit for 5 minutes to allow excess moisture to release.
  2. Add chickpea flour, ground oats, garlic powder, onion powder, cumin, salt, and black pepper to the zucchini and corn mixture. Stir until well combined.
  3. Form the mixture into two equal-sized patties, pressing them firmly to hold their shape.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, until golden brown and heated through.
  5. While the patties are cooking, toast the whole grain burger buns in the same skillet or in a toaster.
  6. Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a cooked patty, tomato slices, and avocado. Top with the other half of the bun.
  7. Serve immediately and enjoy!
