- Zucchini - 200 grams, grated
- Corn kernels - 150 grams (fresh or frozen)
- Chickpea flour - 50 grams
- Oats - 30 grams, finely ground
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for cooking)
- Whole grain burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Avocado - 1/2, sliced
Steps
- In a large bowl, combine the grated zucchini and corn kernels. Mix well and let sit for 5 minutes to allow excess moisture to release.
- Add chickpea flour, ground oats, garlic powder, onion powder, cumin, salt, and black pepper to the zucchini and corn mixture. Stir until well combined.
- Form the mixture into two equal-sized patties, pressing them firmly to hold their shape.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, add the patties and cook for about 4-5 minutes on each side, until golden brown and heated through.
- While the patties are cooking, toast the whole grain burger buns in the same skillet or in a toaster.
- Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a cooked patty, tomato slices, and avocado. Top with the other half of the bun.
