  • Zucchini - 1 medium (about 200g), grated
  • All-purpose flour - 1 cup (120g)
  • Granulated sugar - 1/2 cup (100g)
  • Brown sugar - 1/4 cup (50g)
  • Baking powder - 1 teaspoon
  • Baking soda - 1/2 teaspoon
  • Ground cinnamon - 1 teaspoon
  • Salt - 1/4 teaspoon
  • Vegetable oil - 1/4 cup (60ml)
  • Egg - 1 large
  • Vanilla extract - 1 teaspoon
  • Chopped walnuts - 1/4 cup (30g) (optional)

Steps

  1. Preheat the oven to 175°C (350°F) and grease a small loaf pan.
  2. In a mixing bowl, combine the grated zucchini, vegetable oil, egg, and vanilla extract, and mix well.
  3. In another bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in the chopped walnuts if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
