- Zucchini - 1 medium (about 200g), grated
- All-purpose flour - 1 cup (120g)
- Granulated sugar - 1/2 cup (100g)
- Brown sugar - 1/4 cup (50g)
- Baking powder - 1 teaspoon
- Baking soda - 1/2 teaspoon
- Ground cinnamon - 1 teaspoon
- Salt - 1/4 teaspoon
- Vegetable oil - 1/4 cup (60ml)
- Egg - 1 large
- Vanilla extract - 1 teaspoon
- Chopped walnuts - 1/4 cup (30g) (optional)
Steps
- Preheat the oven to 175°C (350°F) and grease a small loaf pan.
- In a mixing bowl, combine the grated zucchini, vegetable oil, egg, and vanilla extract, and mix well.
- In another bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in the chopped walnuts if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
