Ingredients

  • Zucchini - 1 medium (approximately 200g)
  • Tomatoes - 2 medium (approximately 250g)
  • Fresh spinach - 100g
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Parmesan cheese - 30g, grated
  • Breadcrumbs - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Slice the zucchini and tomatoes into thin rounds.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  4. Add the fresh spinach to the skillet and sauté until wilted, about 2-3 minutes. Season with salt and pepper.
  5. In a baking dish, layer half of the zucchini slices on the bottom, followed by half of the sautéed spinach, and then half of the tomato slices.
  6. Sprinkle half of the Parmesan cheese and half of the oregano over the layers. Repeat with the remaining zucchini, spinach, and tomatoes.
  7. Drizzle the remaining tablespoon of olive oil over the top and sprinkle with the breadcrumbs, remaining Parmesan cheese, and a bit more oregano.
  8. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the top is golden brown.
  9. Remove from the oven and let it cool slightly before serving.
