  • Zucchini - 1 medium, sliced
  • Tomato - 2 medium, sliced
  • Cooked lentils - 1 cup
  • Chickpeas - 1 cup, drained and rinsed
  • Fresh spinach - 2 cups, chopped
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Grated Parmesan cheese - 1/4 cup (optional)
  • Breadcrumbs - 1/4 cup (optional)

Steps

  1. Preheat the oven to 190°C (375°F).
  2. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until translucent, about 3-4 minutes.
  3. Add the chopped spinach to the skillet, cooking until wilted, about 2-3 minutes. Stir in the cooked lentils, chickpeas, dried oregano, salt, and black pepper. Remove from heat.
  4. In a greased baking dish, arrange half of the sliced zucchini at the bottom. Layer half of the lentil and spinach mixture over the zucchini followed by half of the sliced tomatoes. Repeat the layering process with the remaining zucchini, lentil mixture, and tomatoes.
  5. Drizzle the remaining tablespoon of olive oil over the top of the dish. If desired, sprinkle with grated Parmesan cheese and breadcrumbs for a crunchy topping.
  6. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until the top is golden and bubbly.
  7. Remove from the oven, let it cool for a few minutes, and serve warm.
