- Garlic - 2 cloves, minced
- Fresh basil - 10g, chopped
- Fresh thyme - 5g, chopped
- Parmesan cheese - 30g, grated
- Breadcrumbs - 30g
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
Steps
- Preheat the oven to 190°C (375°F).
- Wash and slice the zucchini into thin rounds.
- Chop the tomatoes into thin slices.
- In a medium bowl, combine the olive oil, minced garlic, chopped basil, thyme, salt, and pepper.
- Add the zucchini and tomato slices to the bowl and toss until well coated with the herb mixture.
- In a small bowl, mix the grated Parmesan cheese with the breadcrumbs.
- In a baking dish, layer half of the zucchini and tomato mixture, then sprinkle half of the breadcrumb and cheese mixture on top.
- Repeat with the remaining zucchini and tomato mixture and finish with the remaining breadcrumb and cheese mixture.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the top is golden brown and crispy.
