  • Zucchini - 1 medium (about 200g)
  • Tomatoes - 2 medium (about 250g)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh basil - 10g, chopped
  • Fresh thyme - 5g, chopped
  • Parmesan cheese - 30g, grated
  • Breadcrumbs - 30g
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Wash and slice the zucchini into thin rounds.
  3. Chop the tomatoes into thin slices.
  4. In a medium bowl, combine the olive oil, minced garlic, chopped basil, thyme, salt, and pepper.
  5. Add the zucchini and tomato slices to the bowl and toss until well coated with the herb mixture.
  6. In a small bowl, mix the grated Parmesan cheese with the breadcrumbs.
  7. In a baking dish, layer half of the zucchini and tomato mixture, then sprinkle half of the breadcrumb and cheese mixture on top.
  8. Repeat with the remaining zucchini and tomato mixture and finish with the remaining breadcrumb and cheese mixture.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  10. Remove the foil and bake for an additional 10 minutes, or until the top is golden brown and crispy.
