- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat breadcrumbs - 1/2 cup (50g)
- Parmesan cheese - 1/4 cup (25g), grated
Steps
- Preheat the oven to 190°C (375°F).
- Wash and slice the zucchini and tomatoes into thin rounds.
- In a mixing bowl, combine olive oil, minced garlic, chopped basil, dried oregano, salt, and black pepper.
- Add the sliced zucchini and tomatoes to the bowl and gently toss until well coated with the oil and herb mixture.
- In a separate bowl, mix the whole wheat breadcrumbs with grated Parmesan cheese.
- In a baking dish, layer the zucchini and tomato slices alternately, creating an overlapping pattern.
- Sprinkle the breadcrumb and cheese mixture evenly over the top of the layered vegetables.
