  • Zucchini - 2 medium (about 300g)
  • Tomatoes - 2 medium (about 250g)
  • Olive oil - 2 tablespoons (30ml)
  • Garlic - 2 cloves, minced
  • Fresh basil - 1 tablespoon, chopped
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Whole wheat breadcrumbs - 1/2 cup (50g)
  • Parmesan cheese - 1/4 cup (25g), grated

Steps

  1. Preheat the oven to 190°C (375°F).
  2. Wash and slice the zucchini and tomatoes into thin rounds.
  3. In a mixing bowl, combine olive oil, minced garlic, chopped basil, dried oregano, salt, and black pepper.
  4. Add the sliced zucchini and tomatoes to the bowl and gently toss until well coated with the oil and herb mixture.
  5. In a separate bowl, mix the whole wheat breadcrumbs with grated Parmesan cheese.
  6. In a baking dish, layer the zucchini and tomato slices alternately, creating an overlapping pattern.
  7. Sprinkle the breadcrumb and cheese mixture evenly over the top of the layered vegetables.
