Ingredients

  • Red onion - 1/4 cup, finely diced (about 40g)
  • Fresh cilantro - 1/4 cup, chopped
  • Lime juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Wash the zucchini and cherry tomatoes. Cut the zucchini into small half-moons and halve the cherry tomatoes.
