Ingredients
- Zucchini - 1 medium (about 200g)
- Sweet corn (canned or frozen) - 1 cup (about 150g)
- Fresh spinach - 1 cup (about 30g)
- All-purpose flour - 1/2 cup (about 60g)
- Egg - 1 large
- Green onion - 2 stalks, chopped
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture and set aside.
- In a large bowl, combine the grated zucchini, sweet corn, chopped spinach, flour, egg, green onion, garlic powder, salt, and black pepper. Mix until well combined.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Scoop about 1/4 cup of the mixture and form it into a patty. Place it in the skillet and repeat with the remaining mixture, making sure not to overcrowd the pan.
- Cook the fritters for about 3-4 minutes on each side or until golden brown and crispy. Add more oil as needed.
- Transfer the cooked fritters to a plate lined with paper towels to drain excess oil.
- Serve warm, garnished with additional green onions or a dollop of yogurt if desired.
