  • Sweet corn - 1 cup (about 150g), fresh or frozen
  • Cooked lentils - 1/2 cup (about 100g), drained
  • All-purpose flour - 1/3 cup (about 40g)
  • Egg - 1 large
  • Green onion - 2, finely chopped
  • Garlic - 1 clove, minced
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons, for frying
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a large bowl, combine the grated zucchini, sweet corn, cooked lentils, chopped green onion, minced garlic, cumin, salt, and black pepper.
  2. Add the flour and egg to the vegetable mixture and mix until well combined.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
