- All-purpose flour - 1/3 cup (about 40g)
- Egg - 1 large
- Green onion - 2, finely chopped
- Garlic - 1 clove, minced
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons, for frying
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a large bowl, combine the grated zucchini, sweet corn, cooked lentils, chopped green onion, minced garlic, cumin, salt, and black pepper.
- Add the flour and egg to the vegetable mixture and mix until well combined.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Scoop about 1/4 cup of the fritter mixture into the skillet for each fritter, flattening them slightly.
