Ingredients

  • Zucchini - 1 medium, grated
  • Corn kernels - 1 cup, fresh or frozen
  • Chickpeas - 1 cup, cooked and mashed
  • Green onion - 2, finely chopped
  • Garlic - 1 clove, minced
  • Egg - 1 large
  • All-purpose flour - 1/2 cup
  • Baking powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons for frying
  • Lemon juice - 1 tablespoon

Steps

  1. In a large bowl, combine the grated zucchini, corn kernels, mashed chickpeas, chopped green onion, minced garlic, and lemon juice. Mix well.
  2. Add the egg, flour, baking powder, salt, and black pepper to the vegetable mixture. Stir until just combined; the mixture should be thick but not dry.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, drop spoonfuls of the fritter mixture into the skillet, flattening them slightly with the back of a spatula.
  4. Cook for about 3-4 minutes on each side or until golden brown and crispy. Add more oil as needed for the second batch.
  5. Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb excess oil. Serve warm.
