- Chickpeas - 1 cup, cooked and mashed
- Green onion - 2, finely chopped
- Garlic - 1 clove, minced
- Egg - 1 large
- All-purpose flour - 1/2 cup
- Baking powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons for frying
- Lemon juice - 1 tablespoon
Steps
- In a large bowl, combine the grated zucchini, corn kernels, mashed chickpeas, chopped green onion, minced garlic, and lemon juice. Mix well.
- Add the egg, flour, baking powder, salt, and black pepper to the vegetable mixture. Stir until just combined; the mixture should be thick but not dry.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Once hot, drop spoonfuls of the fritter mixture into the skillet, flattening them slightly with the back of a spatula.
- Cook for about 3-4 minutes on each side or until golden brown and crispy. Add more oil as needed for the second batch.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb excess oil. Serve warm.
