- Shredded cheese (cheddar or mozzarella) - 50 grams
- Egg - 1 large
- Green onion - 2 stalks, finely chopped
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 3 tablespoons for frying
Steps
- In a large bowl, combine the grated zucchini, corn kernels, and chopped green onion.
- Add the flour, shredded cheese, egg, garlic powder, salt, and black pepper to the bowl and mix until well combined.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Spoon about 2 tablespoons of the mixture into the skillet for each fritter, flattening them slightly.
