Ingredients
- Zucchini - 200 grams, grated
- Corn kernels - 100 grams, fresh or frozen
- All-purpose flour - 50 grams
- Cornmeal - 30 grams
- Egg - 1 large
- Green onion - 2, finely chopped
- Garlic - 1 clove, minced
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons (for frying)
- Avocado - 1 medium, sliced
- Lemon juice - 1 tablespoon
Steps
- In a large bowl, combine the grated zucchini, corn kernels, flour, cornmeal, egg, green onion, minced garlic, cumin, salt, and black pepper. Mix until well combined.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Scoop about 2 tablespoons of the batter into the skillet for each fritter, flattening them slightly with the back of a spatula.
- Cook for 3-4 minutes on each side or until golden brown and crispy. Remove from the skillet and set aside on a paper towel to absorb excess oil.
- Add more oil as needed to fry the remaining fritters, ensuring the skillet remains hot.
- While the fritters are cooking, slice the avocado and drizzle with lemon juice to prevent browning.
- Serve the fritters warm, topped with avocado slices.
