Ingredients

  • Zucchini - 200 grams, grated
  • Corn kernels - 100 grams, fresh or frozen
  • All-purpose flour - 50 grams
  • Cornmeal - 30 grams
  • Egg - 1 large
  • Green onion - 2, finely chopped
  • Garlic - 1 clove, minced
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons (for frying)
  • Avocado - 1 medium, sliced
  • Lemon juice - 1 tablespoon

Steps

  1. In a large bowl, combine the grated zucchini, corn kernels, flour, cornmeal, egg, green onion, minced garlic, cumin, salt, and black pepper. Mix until well combined.
  2. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  3. Scoop about 2 tablespoons of the batter into the skillet for each fritter, flattening them slightly with the back of a spatula.
  4. Cook for 3-4 minutes on each side or until golden brown and crispy. Remove from the skillet and set aside on a paper towel to absorb excess oil.
  5. Add more oil as needed to fry the remaining fritters, ensuring the skillet remains hot.
  6. While the fritters are cooking, slice the avocado and drizzle with lemon juice to prevent browning.
  7. Serve the fritters warm, topped with avocado slices.
