- Zucchini - 200 grams, grated
- Corn kernels - 150 grams, fresh or frozen
- All-purpose flour - 50 grams
- Egg - 1 large
- Green onion - 2 stalks, finely chopped
- Garlic - 1 clove, minced
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons, for frying
Steps
- In a large mixing bowl, combine the grated zucchini and a pinch of salt. Let it sit for 5-10 minutes to draw out excess moisture, then squeeze out the liquid using a clean kitchen towel.
- Add corn kernels, flour, egg, green onion, minced garlic, baking powder, salt, and black pepper to the bowl with zucchini. Mix until well combined.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Scoop about 2 tablespoons of the mixture onto the skillet for each fritter, flattening them slightly with the back of a spatula. Cook for 3-4 minutes on each side or until golden brown.
- Transfer the cooked fritters to a plate lined with paper towels to absorb excess oil. Repeat with the remaining mixture, adding more oil to the skillet as needed.
- Serve the fritters warm, optionally with a dollop of yogurt or a fresh salad on the side.
