Ingredients

  • Zucchini - 300 grams
  • Shredded mozzarella cheese - 100 grams
  • Parmesan cheese - 30 grams
  • Almond flour - 50 grams
  • Egg - 1 large
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons for frying

Steps

  1. Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture from the zucchini.
  2. In a mixing bowl, combine the grated zucchini, shredded mozzarella, Parmesan cheese, almond flour, egg, minced garlic, chopped parsley, chopped dill, salt, and black pepper.
  3. Mix all the ingredients until well combined to form a thick batter.
  4. Heat olive oil in a non-stick skillet over medium heat.
  5. Scoop about 2 tablespoons of the zucchini mixture into the skillet for each fritter, flattening them slightly with the back of the spoon.
  6. Cook the fritters for about 3-4 minutes on each side or until they are golden brown and crispy.
  7. Remove the fritters from the skillet and place them on a paper towel to drain excess oil.
  8. Serve warm, garnished with additional herbs if desired.
