- Zucchini - 300 grams
- Shredded mozzarella cheese - 100 grams
- Parmesan cheese - 30 grams
- Almond flour - 50 grams
- Egg - 1 large
- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons for frying
Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture from the zucchini.
- In a mixing bowl, combine the grated zucchini, shredded mozzarella, Parmesan cheese, almond flour, egg, minced garlic, chopped parsley, chopped dill, salt, and black pepper.
- Mix all the ingredients until well combined to form a thick batter.
- Heat olive oil in a non-stick skillet over medium heat.
- Scoop about 2 tablespoons of the zucchini mixture into the skillet for each fritter, flattening them slightly with the back of the spoon.
