- Zucchini - 300 grams
- Egg - 1 large
- Almond flour - 50 grams
- Parmesan cheese - 30 grams, grated
- Feta cheese - 30 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture from the zucchini.
- In a mixing bowl, combine the grated zucchini, egg, almond flour, Parmesan cheese, feta cheese, parsley, dill, garlic powder, salt, and black pepper. Mix until well combined.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Scoop about 2 tablespoons of the zucchini mixture into the skillet for each fritter, flattening them slightly with the back of a spatula. Cook for 3-4 minutes on each side, or until golden brown and crispy.
- Add more olive oil as needed between batches. Repeat until all the mixture is cooked.
