Ingredients

  • Zucchini - 300 grams
  • Egg - 1 large
  • Almond flour - 50 grams
  • Parmesan cheese - 30 grams, grated
  • Feta cheese - 30 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons

Steps

  1. Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture from the zucchini.
  2. In a mixing bowl, combine the grated zucchini, egg, almond flour, Parmesan cheese, feta cheese, parsley, dill, garlic powder, salt, and black pepper. Mix until well combined.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  4. Scoop about 2 tablespoons of the zucchini mixture into the skillet for each fritter, flattening them slightly with the back of a spatula. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  5. Add more olive oil as needed between batches. Repeat until all the mixture is cooked.
