Ingredients

  • Zucchini - 300 grams
  • Eggs - 2 large
  • Almond flour - 50 grams
  • Parmesan cheese - 50 grams, grated
  • Cheddar cheese - 50 grams, shredded
  • Green onion - 2 tablespoons, finely chopped
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons for frying

Steps

  1. Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture from the zucchini.
  2. In a mixing bowl, combine the drained zucchini, eggs, almond flour, Parmesan cheese, cheddar cheese, green onion, garlic powder, salt, and black pepper. Mix until well combined.
  3. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  4. Scoop about 1/4 cup of the zucchini mixture and form it into a patty. Place it in the skillet and flatten slightly. Repeat with remaining mixture, cooking 2-3 fritters at a time.
  5. Cook each fritter for about 3-4 minutes on each side, or until golden brown and crispy. Add more oil as needed.
  6. Remove the fritters from the skillet and place them on a paper towel to drain excess oil. Serve warm.
