- Zucchini - 300 grams
- Eggs - 2 large
- Almond flour - 50 grams
- Parmesan cheese - 50 grams, grated
- Cheddar cheese - 50 grams, shredded
- Green onion - 2 tablespoons, finely chopped
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons for frying
Steps
- Grate the zucchini using a box grater and place it in a clean kitchen towel. Squeeze out excess moisture from the zucchini.
- In a mixing bowl, combine the drained zucchini, eggs, almond flour, Parmesan cheese, cheddar cheese, green onion, garlic powder, salt, and black pepper. Mix until well combined.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Scoop about 1/4 cup of the zucchini mixture and form it into a patty. Place it in the skillet and flatten slightly. Repeat with remaining mixture, cooking 2-3 fritters at a time.
- Cook each fritter for about 3-4 minutes on each side, or until golden brown and crispy. Add more oil as needed.
- Remove the fritters from the skillet and place them on a paper towel to drain excess oil. Serve warm.
