- Zucchini - 2 medium (about 400 grams)
- Cream cheese - 100 grams
- Cheddar cheese, shredded - 100 grams
- Parmesan cheese, grated - 30 grams
- Eggs - 2 large
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 1 tablespoon
- Fresh parsley, chopped - 2 tablespoons (for garnish)
Steps
- Preheat your oven to 180°C (350°F).
- Wash the zucchinis and slice them into thin rounds.
- In a skillet, heat the olive oil over medium heat and sauté the zucchini slices for about 5 minutes until they start to soften. Remove from heat and set aside.
- In a mixing bowl, combine the cream cheese, eggs, garlic powder, onion powder, salt, and black pepper. Mix until smooth.
- Fold in the sautéed zucchini and half of the shredded cheddar cheese into the cream cheese mixture.
