Ingredients

  • Zucchini - 2 medium (about 400 grams)
  • Cream cheese - 100 grams
  • Cheddar cheese, shredded - 100 grams
  • Parmesan cheese, grated - 30 grams
  • Eggs - 2 large
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh parsley, chopped - 2 tablespoons (for garnish)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Wash the zucchinis and slice them into thin rounds.
  3. In a skillet, heat the olive oil over medium heat and sauté the zucchini slices for about 5 minutes until they start to soften. Remove from heat and set aside.
  4. In a mixing bowl, combine the cream cheese, eggs, garlic powder, onion powder, salt, and black pepper. Mix until smooth.
  5. Fold in the sautéed zucchini and half of the shredded cheddar cheese into the cream cheese mixture.
  6. Transfer the mixture to a greased baking dish (about 20x20 cm) and spread it evenly.
  7. Top with the remaining shredded cheddar cheese and the grated Parmesan cheese.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
