Ingredients

  • Zucchini - 2 medium
  • Bell pepper (red or yellow) - 1 medium
  • Cherry tomatoes - 150 grams
  • Carrot - 1 medium
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Italian seasoning - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Parmesan cheese (grated) - 30 grams
  • Fresh basil leaves - a handful

Steps

  1. Spiralize the zucchinis using a spiralizer to create zoodles and set them aside.
  2. Julienne the bell pepper and carrot, and halve the cherry tomatoes.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the bell pepper and carrot to the skillet and cook for 3-4 minutes until they start to soften.
  5. Stir in the cherry tomatoes and Italian seasoning, then season with salt and black pepper to taste. Cook for another 2-3 minutes until the tomatoes begin to soften.
  6. Add the zoodles to the skillet and toss everything together for about 2-3 minutes until the zoodles are just tender but still have a bite.
  7. Remove from heat and stir in the grated Parmesan cheese and fresh basil leaves.
  8. Serve immediately, garnished with extra Parmesan if desired.
