- Zucchini - 2 medium
- Bell pepper (red or yellow) - 1 medium
- Cherry tomatoes - 150 grams
- Carrot - 1 medium
- Olive oil - 2 tablespoons
- Garlic (minced) - 2 cloves
- Italian seasoning - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Parmesan cheese (grated) - 30 grams
- Fresh basil leaves - a handful
Steps
- Spiralize the zucchinis using a spiralizer to create zoodles and set them aside.
- Julienne the bell pepper and carrot, and halve the cherry tomatoes.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the bell pepper and carrot to the skillet and cook for 3-4 minutes until they start to soften.
- Stir in the cherry tomatoes and Italian seasoning, then season with salt and black pepper to taste. Cook for another 2-3 minutes until the tomatoes begin to soften.
- Add the zoodles to the skillet and toss everything together for about 2-3 minutes until the zoodles are just tender but still have a bite.
- Remove from heat and stir in the grated Parmesan cheese and fresh basil leaves.
- Serve immediately, garnished with extra Parmesan if desired.
