Ingredients

  • Zucchini - 2 medium-sized
  • Shrimp - 200 grams, peeled and deveined
  • Egg - 2 large
  • Red bell pepper - 1/2, thinly sliced
  • Green onion - 2, chopped
  • Garlic - 2 cloves, minced
  • Peanut butter - 2 tablespoons
  • Soy sauce - 2 tablespoons (or tamari for gluten-free)
  • Lime juice - 1 tablespoon
  • Fish sauce - 1 teaspoon
  • Cilantro - 1/4 cup, chopped
  • Crushed peanuts - 2 tablespoons, for garnish
  • Sriracha - to taste (optional)
  • Sesame oil - 1 tablespoon
  • Salt - to taste

Steps

  1. Spiralize the zucchini using a spiralizer to create zoodles and set aside.
  2. In a large skillet, heat the sesame oil over medium heat and add minced garlic, sautéing for about 1 minute until fragrant.
  3. Add shrimp to the skillet, cooking for about 2-3 minutes until they turn pink and opaque. Remove shrimp and set aside.
  4. In the same skillet, add red bell pepper and cook for 2-3 minutes until slightly softened.
  5. Push the bell pepper to the side of the skillet and crack the eggs into the pan, scrambling them until fully cooked.
  6. Add the zoodles to the skillet, followed by the cooked shrimp, peanut butter, soy sauce, lime juice, and fish sauce. Toss everything together until well combined and heated through, about 2-3 minutes.
  7. Stir in chopped green onions and cilantro, adjusting salt and adding Sriracha if desired for heat.
  8. Serve hot, garnished with crushed peanuts and additional cilantro.
