- Shrimp - 200 grams, peeled and deveined
- Egg - 2 large
- Red bell pepper - 1/2, thinly sliced
- Green onion - 2, chopped
- Garlic - 2 cloves, minced
- Peanut butter - 2 tablespoons
- Soy sauce - 2 tablespoons (or tamari for gluten-free)
- Lime juice - 1 tablespoon
- Fish sauce - 1 teaspoon
- Cilantro - 1/4 cup, chopped
- Crushed peanuts - 2 tablespoons, for garnish
- Sriracha - to taste (optional)
- Sesame oil - 1 tablespoon
- Salt - to taste
Steps
- Spiralize the zucchini using a spiralizer to create zoodles and set aside.
- In a large skillet, heat the sesame oil over medium heat and add minced garlic, sautéing for about 1 minute until fragrant.
- Add shrimp to the skillet, cooking for about 2-3 minutes until they turn pink and opaque. Remove shrimp and set aside.
- In the same skillet, add red bell pepper and cook for 2-3 minutes until slightly softened.
- Push the bell pepper to the side of the skillet and crack the eggs into the pan, scrambling them until fully cooked.
- Add the zoodles to the skillet, followed by the cooked shrimp, peanut butter, soy sauce, lime juice, and fish sauce. Toss everything together until well combined and heated through, about 2-3 minutes.
- Stir in chopped green onions and cilantro, adjusting salt and adding Sriracha if desired for heat.
- Serve hot, garnished with crushed peanuts and additional cilantro.
