Ingredients

  • Quinoa - 1 cup
  • Water - 2 cups
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1, diced
  • Cucumber - 1, diced
  • Cherry tomatoes - 1 cup, halved
  • Avocado - 1, diced
  • Fresh cilantro - 1/4 cup, chopped
  • Lime - 1, juiced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cumin - 1/2 teaspoon

Steps

  1. Rinse the quinoa under cold water in a fine-mesh strainer.
  2. In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and water is absorbed.
  4. Remove from heat and let it sit, covered, for 5 minutes. Fluff the quinoa with a fork.
  5. While the quinoa is cooking, heat olive oil in a skillet over medium heat. Add diced red bell pepper and sauté for 3-4 minutes until slightly softened.
  6. In a large mixing bowl, combine the cooked quinoa, sautéed red bell pepper, diced cucumber, halved cherry tomatoes, diced avocado, and chopped cilantro.
  7. In a small bowl, whisk together the lime juice, salt, black pepper, and cumin. Pour this dressing over the quinoa mixture and toss gently to combine.
  8. Serve immediately or chill in the refrigerator for 15 minutes before serving for a refreshing dish.
