- Water - 2 cups
- Olive oil - 2 tablespoons
- Red bell pepper - 1, diced
- Cucumber - 1, diced
- Cherry tomatoes - 1 cup, halved
- Avocado - 1, diced
- Fresh cilantro - 1/4 cup, chopped
- Lime - 1, juiced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cumin - 1/2 teaspoon
Steps
- Rinse the quinoa under cold water in a fine-mesh strainer.
- In a medium saucepan, combine the rinsed quinoa and water. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is cooked and water is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the quinoa with a fork.
- While the quinoa is cooking, heat olive oil in a skillet over medium heat. Add diced red bell pepper and sauté for 3-4 minutes until slightly softened.
- In a large mixing bowl, combine the cooked quinoa, sautéed red bell pepper, diced cucumber, halved cherry tomatoes, diced avocado, and chopped cilantro.
- In a small bowl, whisk together the lime juice, salt, black pepper, and cumin. Pour this dressing over the quinoa mixture and toss gently to combine.
- Serve immediately or chill in the refrigerator for 15 minutes before serving for a refreshing dish.
