- Chicken thighs - 4 pieces (about 600g)
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Lime juice - 1 tablespoon
- Garlic powder - 1 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons (chopped) for garnish
Steps
- In a bowl, mix olive oil, lemon juice, lime juice, garlic powder, paprika, cumin, salt, and black pepper to create the marinade.
- Place the chicken thighs in a resealable plastic bag or a shallow dish and pour the marinade over them. Seal or cover and refrigerate for at least 15 minutes (up to 2 hours for more flavor).
- Preheat your grill or skillet over medium-high heat.
- Remove the chicken from the marinade and discard the leftover marinade.
- Cook the chicken thighs for about 6-7 minutes on each side, or until they reach an internal temperature of 75°C (165°F) and have a nice char.
- Remove from heat and let rest for 5 minutes before slicing.
- Garnish with fresh parsley and serve with a side of low-carb vegetables or salad.
