Ingredients

  • Red bell pepper - 1, diced
  • Cucumber - 1, diced
  • Corn kernels - 1/2 cup (fresh or frozen)
  • Black beans - 1/2 cup, rinsed and drained
  • Green onions - 2, chopped
  • Fresh cilantro - 1/4 cup, chopped
  • Olive oil - 2 tablespoons
  • Apple cider vinegar - 1 tablespoon
  • BBQ sauce - 3 tablespoons

Steps

  1. Rinse the quinoa under cold water in a fine mesh strainer.
