Ingredients

  • Cauliflower - 1 medium head (about 600g)
  • Olive oil - 2 tablespoons
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • BBQ sauce - 1/2 cup (dairy-free)
  • Apple cider vinegar - 1 tablespoon
  • Maple syrup - 1 tablespoon
  • Fresh parsley - 2 tablespoons (chopped, for garnish)

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Cut the cauliflower into bite-sized florets and place them in a large mixing bowl.
  3. In a small bowl, whisk together the olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  4. Pour the spice mixture over the cauliflower florets and toss until evenly coated.
  5. Spread the cauliflower on a baking sheet lined with parchment paper in a single layer.
  6. Roast in the preheated oven for about 20 minutes, or until the cauliflower is tender and slightly browned.
  7. While the cauliflower is roasting, prepare the BBQ sauce by combining the BBQ sauce, apple cider vinegar, and maple syrup in a small saucepan over medium heat. Stir until warmed through and well combined.
  8. Once the cauliflower is done roasting, remove it from the oven and drizzle the BBQ sauce over the florets. Toss gently to coat.
  9. Return the coated cauliflower to the oven and roast for an additional 5-10 minutes, until the sauce is caramelized.
  10. Serve warm, garnished with chopped fresh parsley.
