Ingredients
- Cauliflower - 1 medium head (about 600g)
- Olive oil - 2 tablespoons
- Smoked paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- BBQ sauce - 1/2 cup (dairy-free)
- Apple cider vinegar - 1 tablespoon
- Maple syrup - 1 tablespoon
- Fresh parsley - 2 tablespoons (chopped, for garnish)
Steps
- Preheat your oven to 200°C (400°F).
- Cut the cauliflower into bite-sized florets and place them in a large mixing bowl.
- In a small bowl, whisk together the olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper.
- Pour the spice mixture over the cauliflower florets and toss until evenly coated.
- Spread the cauliflower on a baking sheet lined with parchment paper in a single layer.
- Roast in the preheated oven for about 20 minutes, or until the cauliflower is tender and slightly browned.
- While the cauliflower is roasting, prepare the BBQ sauce by combining the BBQ sauce, apple cider vinegar, and maple syrup in a small saucepan over medium heat. Stir until warmed through and well combined.
- Once the cauliflower is done roasting, remove it from the oven and drizzle the BBQ sauce over the florets. Toss gently to coat.
- Return the coated cauliflower to the oven and roast for an additional 5-10 minutes, until the sauce is caramelized.
- Serve warm, garnished with chopped fresh parsley.
