Ingredients

  • Basmati rice - 1 cup
  • Water - 2 cups
  • Olive oil - 2 tablespoons
  • Za'atar spice blend - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Fresh parsley - 1/4 cup, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the basmati rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic to the saucepan and cook for another minute until fragrant.
  4. Stir in the za'atar spice blend and salt, cooking for an additional minute to toast the spices.
  5. Add the rinsed rice to the saucepan, stirring to coat the rice in the spice mixture.
  6. Pour in 2 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed.
  7. Remove the saucepan from heat and let it sit covered for 5 minutes. Fluff the rice with a fork.
  8. Stir in the chopped parsley and lemon juice before serving.
