Steps
- Rinse the brown rice under cold water until the water runs clear, then set aside.
- In a medium pot, heat olive oil over medium heat and sauté the diced onion and minced garlic until translucent, about 3-4 minutes.

- Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 25-30 minutes, or until the rice is tender and has absorbed the liquid.
- Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh parsley and serve warm.
