  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste

  • Fresh parsley, chopped - for garnish

Steps

  1. Rinse the brown rice under cold water until the water runs clear, then set aside.
  2. In a medium pot, heat olive oil over medium heat and sauté the diced onion and minced garlic until translucent, about 3-4 minutes.

  5. Add the rinsed brown rice to the pot, followed by the vegetable broth, paprika, cumin, salt, and black pepper. Stir well to combine.
  6. Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 25-30 minutes, or until the rice is tender and has absorbed the liquid.
  7. Remove from heat and let it sit covered for 5 minutes. Fluff the rice with a fork before serving.
