  • Salt - 4 grams
  • Olive oil - 15 ml
  • Zaatar spice blend - 30 grams
  • Sesame seeds - 10 grams
  • Olive oil (for topping) - 15 ml

Steps

  1. In a mixing bowl, combine the warm water, instant yeast, and sugar. Let it sit for about 5 minutes until frothy.
  2. In a separate bowl, mix the all-purpose flour and salt together.
  3. Gradually add the yeast mixture and olive oil to the flour, mixing until a dough forms.
  4. Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic.
  5. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 15 minutes.
  6. Preheat the oven to 220°C (428°F).
  7. Once the dough has risen, divide it into two equal portions and roll each portion into a flat round shape about 1/4 inch thick.
  8. In a small bowl, mix the zaatar spice blend with olive oil to create a paste.
  9. Spread the zaatar mixture evenly over the surface of each flatbread, then sprinkle with sesame seeds.
  10. Place the flatbreads on a baking sheet lined with parchment paper and bake in the preheated oven for 10-12 minutes until golden brown.
  11. Remove from the oven, let cool slightly, then cut into wedges and serve warm.
