Ingredients

  • Chicken breast - 300 grams
  • Zaatar spice blend - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic clove - 1, minced
  • Mixed salad greens - 4 cups
  • Cherry tomatoes - 1 cup, halved
  • Cucumber - 1 small, diced
  • Red onion - 1/4, thinly sliced
  • Feta cheese - 50 grams, crumbled
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat a skillet over medium heat.
  2. In a bowl, combine the chicken breast with zaatar, 1 tablespoon of olive oil, minced garlic, salt, and black pepper. Mix well to coat the chicken.
  3. Place the chicken in the preheated skillet and cook for 6-7 minutes on each side or until fully cooked through and golden brown. Remove from heat and let it rest for a few minutes before slicing.
  4. In a large mixing bowl, combine the mixed salad greens, cherry tomatoes, cucumber, and red onion.
  5. In a small bowl, whisk together the remaining tablespoon of olive oil, lemon juice, salt, and pepper to create the dressing.
  6. Pour the dressing over the salad and toss to combine.
  7. Slice the cooked chicken and place it on top of the salad. Sprinkle with crumbled feta cheese before serving.
