Ingredients
- boneless chicken breast - 250 grams
- flatbread (pita or naan) - 2 pieces
- zaatar spice blend - 2 tablespoons
- olive oil - 2 tablespoons
- garlic - 2 cloves, minced
- lemon juice - 1 tablespoon
- salt - 1/2 teaspoon
- pepper - 1/4 teaspoon
- plain yogurt - 100 grams
- cucumber - 1/2, diced
- tomato - 1 medium, diced
- fresh parsley - 2 tablespoons, chopped
Steps
- In a bowl, combine zaatar spice blend, olive oil, minced garlic, lemon juice, salt, and pepper to create a marinade.
- Cut the chicken breast into bite-sized pieces and add it to the marinade, mixing well to coat. Let it marinate for at least 15 minutes.
- While the chicken marinates, prepare the yogurt sauce by mixing plain yogurt with diced cucumber, diced tomato, and chopped parsley in a bowl. Set aside.
- Heat a skillet over medium-high heat. Add the marinated chicken pieces and cook for about 7-10 minutes, stirring occasionally, until the chicken is cooked through and golden brown.
- While the chicken is cooking, warm the flatbreads in a toaster or on a skillet for about 1-2 minutes per side.
- To assemble, place the cooked chicken on each flatbread and drizzle with the yogurt sauce. You can add extra chopped parsley if desired.
- Fold the flatbreads over and serve immediately, garnished with extra zaatar if preferred.
