Ingredients

  • boneless chicken breast - 250 grams
  • flatbread (pita or naan) - 2 pieces
  • zaatar spice blend - 2 tablespoons
  • olive oil - 2 tablespoons
  • garlic - 2 cloves, minced
  • lemon juice - 1 tablespoon
  • salt - 1/2 teaspoon
  • pepper - 1/4 teaspoon
  • plain yogurt - 100 grams
  • cucumber - 1/2, diced
  • tomato - 1 medium, diced
  • fresh parsley - 2 tablespoons, chopped

Steps

  1. In a bowl, combine zaatar spice blend, olive oil, minced garlic, lemon juice, salt, and pepper to create a marinade.
  2. Cut the chicken breast into bite-sized pieces and add it to the marinade, mixing well to coat. Let it marinate for at least 15 minutes.
  3. While the chicken marinates, prepare the yogurt sauce by mixing plain yogurt with diced cucumber, diced tomato, and chopped parsley in a bowl. Set aside.
  4. Heat a skillet over medium-high heat. Add the marinated chicken pieces and cook for about 7-10 minutes, stirring occasionally, until the chicken is cooked through and golden brown.
  5. While the chicken is cooking, warm the flatbreads in a toaster or on a skillet for about 1-2 minutes per side.
  6. To assemble, place the cooked chicken on each flatbread and drizzle with the yogurt sauce. You can add extra chopped parsley if desired.
  7. Fold the flatbreads over and serve immediately, garnished with extra zaatar if preferred.
