Ingredients

  • Wild rice - 100 grams
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Mushrooms - 100 grams, sliced
  • Spinach - 50 grams, fresh
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Thyme - 1 teaspoon, dried
  • Rosemary - 1 teaspoon, dried
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Rinse the wild rice under cold water and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
  3. Stir in the minced garlic and sliced mushrooms, cooking for another 3-4 minutes until the mushrooms are tender.
  4. Add the rinsed wild rice to the pot, followed by the vegetable broth, thyme, rosemary, salt, and pepper. Bring to a boil.
  5. Reduce the heat to low, cover, and let it simmer for about 25-30 minutes, or until the wild rice is tender and has absorbed most of the broth.
  6. Stir in the fresh spinach and cook for an additional 2-3 minutes until wilted.
  7. Taste and adjust seasoning as needed before serving.
