- Wild rice - 100 grams
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Onion - 1 small, diced
- Garlic - 2 cloves, minced
- Mushrooms - 100 grams, sliced
- Spinach - 50 grams, fresh
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Thyme - 1 teaspoon, dried
- Rosemary - 1 teaspoon, dried
- Salt - to taste
- Pepper - to taste
Steps
- Rinse the wild rice under cold water and set aside.
- In a medium pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until softened.
- Stir in the minced garlic and sliced mushrooms, cooking for another 3-4 minutes until the mushrooms are tender.
- Add the rinsed wild rice to the pot, followed by the vegetable broth, thyme, rosemary, salt, and pepper. Bring to a boil.
- Reduce the heat to low, cover, and let it simmer for about 25-30 minutes, or until the wild rice is tender and has absorbed most of the broth.
- Stir in the fresh spinach and cook for an additional 2-3 minutes until wilted.
- Taste and adjust seasoning as needed before serving.
