Ingredients

  • Wild rice - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced
  • Mushrooms - 100 grams, sliced
  • Vegetable broth - 750 milliliters
  • Coconut milk - 200 milliliters
  • Thyme - 1 teaspoon, dried
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Rinse the wild rice under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5-7 minutes until softened.
  3. Add the minced garlic and sliced mushrooms, and cook for another 3-4 minutes until the mushrooms are tender.
  4. Stir in the wild rice, vegetable broth, coconut milk, dried thyme, and bay leaf. Bring the mixture to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for 25-30 minutes, or until the wild rice is cooked and tender.
  6. Remove the bay leaf, and season the soup with salt and black pepper to taste.
  7. Serve hot, garnished with chopped parsley.
