- Wild rice - 100 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Garlic - 2 cloves, minced
- Mushrooms - 100 grams, sliced
- Vegetable broth - 750 milliliters
- Coconut milk - 200 milliliters
- Thyme - 1 teaspoon, dried
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- Rinse the wild rice under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté for about 5-7 minutes until softened.
- Add the minced garlic and sliced mushrooms, and cook for another 3-4 minutes until the mushrooms are tender.
- Stir in the wild rice, vegetable broth, coconut milk, dried thyme, and bay leaf. Bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for 25-30 minutes, or until the wild rice is cooked and tender.
- Remove the bay leaf, and season the soup with salt and black pepper to taste.
- Serve hot, garnished with chopped parsley.
