Ingredients

  • Wild rice - 1/2 cup (90 g)
  • Coconut milk (full-fat) - 1 cup (240 ml)
  • Maple syrup - 2 tablespoons (30 ml)
  • Vanilla extract - 1 teaspoon (5 ml)
  • Cinnamon - 1/2 teaspoon (2 g)
  • Salt - a pinch
  • Chopped nuts (e.g., pecans or almonds) - 2 tablespoons (15 g)
  • Dried fruit (e.g., raisins or cranberries) - 2 tablespoons (30 g)

Steps

  1. Rinse the wild rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed wild rice with 1 1/2 cups (360 ml) of water and a pinch of salt. Bring to a boil over medium-high heat.
  3. Once boiling, reduce the heat to low, cover, and simmer for about 30 minutes, or until the wild rice is tender and the grains have burst open.
  4. Drain any excess water from the wild rice and return it to the saucepan.
  5. Add the coconut milk, maple syrup, vanilla extract, cinnamon, and a pinch of salt to the wild rice. Stir to combine.
  6. Cook over low heat for an additional 5-10 minutes, stirring occasionally, until the mixture is heated through and has thickened to a pudding-like consistency.
  7. Remove from heat and stir in the chopped nuts and dried fruit.
  8. Serve warm or chilled, garnished with additional nuts or a drizzle of maple syrup if desired.
