- Water - 2 cups (480ml)
- Maple syrup - 2 tablespoons (30ml)
- Vanilla extract - 1 teaspoon (5ml)
- Cinnamon - 1/2 teaspoon (2g)
- Sea salt - 1/4 teaspoon (1.5g)
- Chopped nuts (such as almonds or walnuts) - 1/4 cup (30g)
- Fresh berries (optional) - 1/2 cup (75g)
Steps
- Rinse the wild rice under cold water to remove any debris.
- In a medium saucepan, combine the rinsed wild rice, 2 cups of water, and a pinch of sea salt.
- Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 40 minutes, or until the rice is tender and the grains have burst open.
- Once cooked, drain any excess water from the rice if necessary.
- In the same saucepan, add the coconut milk, maple syrup, vanilla extract, cinnamon, and remaining sea salt to the cooked wild rice.
- Stir the mixture over medium heat until warmed through and creamy, about 5 minutes.
- Serve the porridge in bowls, topped with chopped nuts and fresh berries if desired.
