Ingredients

  • Wild rice - 1 cup (200g)
  • Coconut milk - 1 cup (240ml)
  • Water - 2 cups (480ml)
  • Maple syrup - 2 tablespoons (30ml)
  • Vanilla extract - 1 teaspoon (5ml)
  • Cinnamon - 1/2 teaspoon (2g)
  • Sea salt - 1/4 teaspoon (1.5g)
  • Chopped nuts (such as almonds or walnuts) - 1/4 cup (30g)
  • Fresh berries (optional) - 1/2 cup (75g)

Steps

  1. Rinse the wild rice under cold water to remove any debris.
  2. In a medium saucepan, combine the rinsed wild rice, 2 cups of water, and a pinch of sea salt.
  3. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 40 minutes, or until the rice is tender and the grains have burst open.
  4. Once cooked, drain any excess water from the rice if necessary.
  5. In the same saucepan, add the coconut milk, maple syrup, vanilla extract, cinnamon, and remaining sea salt to the cooked wild rice.
  6. Stir the mixture over medium heat until warmed through and creamy, about 5 minutes.
  7. Serve the porridge in bowls, topped with chopped nuts and fresh berries if desired.
