Ingredients

  • Wild rice - 150 grams
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Yellow onion - 1 medium, diced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Garlic - 2 cloves, minced
  • Mushrooms - 100 grams, sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Thyme - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Rinse the wild rice under cold water and drain.
  2. In a medium saucepan, heat the vegetable broth and bring it to a boil.
  3. Add the wild rice to the boiling broth, reduce the heat to low, cover, and simmer for about 30 minutes or until the rice is tender and has absorbed most of the liquid.
  4. While the rice is cooking, heat the olive oil in a large skillet over medium heat.
  5. Add the diced onion, carrot, and celery, and sauté for about 5 minutes until the vegetables are softened.
  6. Stir in the minced garlic and sliced mushrooms, cooking for an additional 5 minutes until the mushrooms are tender.
  7. Once the wild rice is cooked, add it to the skillet with the sautéed vegetables.
  8. Stir in the chopped parsley, dried thyme, salt, and black pepper. Mix well and cook for another 2-3 minutes to heat through.
  9. Serve warm, garnished with additional parsley if desired.
