Ingredients

  • Wild rice - 100 grams
  • Coconut flour - 30 grams
  • Egg - 1 large
  • Green onion - 2, finely chopped
  • Garlic powder - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons

Steps

  1. Rinse the wild rice under cold water and cook it according to package instructions until tender, about 40-50 minutes.
  2. Once cooked, allow the wild rice to cool slightly, then combine it in a mixing bowl with coconut flour, egg, green onion, garlic powder, dried thyme, salt, and black pepper.
  3. Mix until well combined and form the mixture into small patties or cakes, about 5 cm in diameter.
  4. Heat olive oil in a non-stick skillet over medium heat. Cook the rice cakes for about 4-5 minutes on each side or until golden brown and crispy.
