Ingredients

  • Wild grapes - 2 cups, cleaned and de-stemmed

  • Raw honey - 1/4 cup
  • Lemon juice - 1 tablespoon
  • Paleo-friendly pectin - 1 tablespoon

Steps

  1. In a medium saucepan, combine the cleaned wild grapes and water. Bring to a boil over medium heat, then reduce to a simmer and cook for about 15 minutes, mashing the grapes gently to release their juices.
  2. Remove the saucepan from heat and strain the mixture through a fine mesh sieve or cheesecloth into a bowl, discarding the solids. You should have about 1 cup of grape juice.
  3. Return the juice to the saucepan and add the raw honey and lemon juice. Stir to combine.
  4. Sprinkle the pectin into the grape juice mixture while stirring continuously to avoid clumping. Bring the mixture to a rapid boil and cook for about 5 minutes, stirring frequently.
  5. Remove the saucepan from heat and let the jelly cool slightly. Pour it into sterilized jars and let it set at room temperature until fully cooled, then refrigerate.
