Steps
- In a medium saucepan, combine the cleaned wild grapes and water. Bring to a boil over medium heat, then reduce to a simmer and cook for about 15 minutes, mashing the grapes gently to release their juices.
- Remove the saucepan from heat and strain the mixture through a fine mesh sieve or cheesecloth into a bowl, discarding the solids. You should have about 1 cup of grape juice.
- Return the juice to the saucepan and add the raw honey and lemon juice. Stir to combine.
- Sprinkle the pectin into the grape juice mixture while stirring continuously to avoid clumping. Bring the mixture to a rapid boil and cook for about 5 minutes, stirring frequently.
- Remove the saucepan from heat and let the jelly cool slightly. Pour it into sterilized jars and let it set at room temperature until fully cooled, then refrigerate.
