- Venison (or other wild game meat) - 300 grams
- Coconut aminos - 3 tablespoons
- Apple cider vinegar - 1 tablespoon
- Liquid smoke - 1 teaspoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Black pepper - 1 teaspoon
- Red pepper flakes - 1/2 teaspoon
- Salt - 1 teaspoon
Steps
- Slice the venison into thin strips, about 0.5 cm thick, and place them in a large bowl.
- In a separate bowl, mix together coconut aminos, apple cider vinegar, liquid smoke, garlic powder, onion powder, black pepper, red pepper flakes, and salt.
- Pour the marinade over the sliced meat, ensuring all pieces are well coated. Cover the bowl and refrigerate for at least 4 hours or overnight for best flavor.
- Preheat your dehydrator to 70°C (160°F). If you don’t have a dehydrator, you can use an oven set to the lowest temperature (around 70°C or 160°F).
- Remove the meat from the marinade and pat dry with paper towels to remove excess liquid.
- Arrange the strips in a single layer on the dehydrator trays or a baking sheet lined with parchment paper.
- Dehydrate for 4-6 hours, or until the jerky is dry but still slightly pliable. If using an oven, check every hour until desired texture is reached.
- Once done, let the jerky cool completely before storing it in an airtight container.
