- Almond flour - 100 grams
- Coconut oil - 30 grams, melted
- Maple syrup - 1 tablespoon
- Salt - 1/4 teaspoon
- Mixed wild berries (blueberries, raspberries, strawberries) - 150 grams
- Coconut cream - 50 grams
- Vanilla extract - 1/2 teaspoon
- Chia seeds - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, melted coconut oil, maple syrup, and salt until a dough forms.
- Press the dough into the bottom and sides of two small tart pans (about 10 cm in diameter) evenly.
- Prick the crust with a fork and bake in the preheated oven for 10-12 minutes, or until lightly golden.
- While the crust is baking, prepare the filling by mixing the wild berries and chia seeds in a bowl. Let it sit for about 10 minutes to allow the chia seeds to absorb moisture.
- Once the crusts are done, remove them from the oven and let them cool for a few minutes.
- In a small bowl, whip the coconut cream with vanilla extract until smooth.
- Once the crusts are cool, fill them with the wild berry mixture and top with whipped coconut cream.
- Serve immediately or chill for a firmer texture.
