- Cream cheese - 50 grams, softened
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, cocoa powder, baking soda, and salt until well combined.
- In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Mix in the vanilla extract and vegetable oil, then add the milk and combine well.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Using a tablespoon, drop rounded balls of batter onto the prepared baking sheet, leaving space between each for spreading.
- Bake for 10-12 minutes or until the cookies spring back when lightly pressed.
- Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- While the cookies are cooling, prepare the filling by beating together the cream cheese and powdered sugar until smooth.
- Once the cookies are completely cool, spread a generous amount of the cream cheese filling on the flat side of one cookie and top with another cookie to form a sandwich.
