Ingredients

  • Brown sugar - 25 grams
  • Vanilla extract - 1 teaspoon
  • Milk - 60 ml
  • Vegetable oil - 1 tablespoon
  • Powdered sugar - 100 grams
  • Cream cheese - 50 grams, softened

Steps

  1. Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt until well combined.
  3. In another bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Mix in the vanilla extract and vegetable oil, then add the milk and combine well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Using a tablespoon, drop rounded balls of batter onto the prepared baking sheet, leaving space between each for spreading.

  8. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. While the cookies are cooling, prepare the filling by beating together the cream cheese and powdered sugar until smooth.
  10. Once the cookies are completely cool, spread a generous amount of the cream cheese filling on the flat side of one cookie and top with another cookie to form a sandwich.
