Ingredients

  • Whole wheat spaghetti - 180 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cherry tomatoes - 200 grams, halved
  • Spinach - 100 grams, fresh
  • Parmesan cheese - 30 grams, grated
  • Salt - to taste
  • Black pepper - to taste
  • Basil - 1 tablespoon, fresh, chopped

Steps

  1. Bring a large pot of salted water to a boil and cook the whole wheat spaghetti according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 1 minute until fragrant, being careful not to burn it.
  4. Add the halved cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften.
  5. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  6. Once the spaghetti is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet.
  7. Toss the spaghetti with the garlic, tomatoes, and spinach, adding reserved pasta water as needed to create a light sauce.
  8. Season with salt, black pepper, and stir in the fresh basil.
  9. Serve the spaghetti hot, topped with grated Parmesan cheese.
