Ingredients

  • Whole grain fettuccine - 200 grams
  • Unsalted butter - 30 grams
  • Garlic, minced - 2 cloves
  • Heavy cream - 120 ml
  • Grated Parmesan cheese - 50 grams
  • Black pepper - 1/2 teaspoon
  • Salt - to taste
  • Fresh parsley, chopped - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil. Add the whole grain fettuccine and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta cooks, melt the unsalted butter in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, making sure not to burn it.
  3. Pour in the heavy cream and bring to a gentle simmer. Allow it to cook for about 2-3 minutes, stirring occasionally.
  4. Stir in the grated Parmesan cheese until melted and smooth. Season the sauce with black pepper and salt to taste.
  5. Once the fettuccine is cooked, reserve about 1/2 cup of pasta water, then drain the pasta.
  6. Add the drained fettuccine to the skillet with the Alfredo sauce. Toss well to combine, adding reserved pasta water as needed to reach desired consistency.
  7. Serve hot, garnished with chopped fresh parsley.
