- Garlic, minced - 2 cloves
- Heavy cream - 120 ml
- Grated Parmesan cheese - 50 grams
- Black pepper - 1/2 teaspoon
- Salt - to taste
- Fresh parsley, chopped - 1 tablespoon
Steps
- Bring a large pot of salted water to a boil. Add the whole grain fettuccine and cook according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta cooks, melt the unsalted butter in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, making sure not to burn it.
- Pour in the heavy cream and bring to a gentle simmer. Allow it to cook for about 2-3 minutes, stirring occasionally.
- Stir in the grated Parmesan cheese until melted and smooth. Season the sauce with black pepper and salt to taste.
- Once the fettuccine is cooked, reserve about 1/2 cup of pasta water, then drain the pasta.
- Add the drained fettuccine to the skillet with the Alfredo sauce. Toss well to combine, adding reserved pasta water as needed to reach desired consistency.
- Serve hot, garnished with chopped fresh parsley.
