  • Venison stew meat - 400 grams

  • Mushrooms - 150 grams, sliced
  • Sweet potato - 1 medium, cubed
  • Beef broth - 500 ml
  • Olive oil - 2 tablespoons
  • Fresh thyme - 1 teaspoon
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Increase the heat to medium-high and add the venison stew meat, browning it on all sides.
  4. Stir in the diced carrots, celery, and sliced mushrooms, cooking for another 5 minutes.
  5. Add the cubed sweet potato, beef broth, thyme, bay leaf, salt, and pepper.
  6. Bring the stew to a boil, then reduce the heat to low and cover.
  7. Simmer for 1.5 hours, stirring occasionally, until the venison is tender.
