Ingredients
- Ground venison - 400 grams
- Pork fat (or bacon fat) - 100 grams
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Dried thyme - 1 teaspoon
- Dried sage - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cayenne pepper - 1/4 teaspoon (optional)
- Natural casing (hog casings) - enough for 4 small links
Steps
- Soak the hog casings in water for at least 30 minutes to soften.
- In a large mixing bowl, combine the ground venison and pork fat, mixing thoroughly.
- Add garlic powder, onion powder, dried thyme, dried sage, paprika, salt, black pepper, and cayenne pepper to the meat mixture, and mix well until all ingredients are evenly incorporated.
- Rinse the soaked casings under cold water and then slide them onto the sausage stuffer's nozzle.
- Carefully fill the casings with the meat mixture, being careful not to overstuff. Tie off the ends of the casings securely.
- Heat a skillet over medium heat and add a little oil or cooking fat. Once hot, add the sausage links and cook for about 4-5 minutes on each side until browned and cooked through.
- Remove the sausage links from the skillet and let them rest for a few minutes before slicing and serving.
