Ingredients

  • Ground venison - 400 grams
  • Pork fat (or bacon fat) - 100 grams
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Dried sage - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cayenne pepper - 1/4 teaspoon (optional)
  • Natural casing (hog casings) - enough for 4 small links

Steps

  1. Soak the hog casings in water for at least 30 minutes to soften.
  2. In a large mixing bowl, combine the ground venison and pork fat, mixing thoroughly.
  3. Add garlic powder, onion powder, dried thyme, dried sage, paprika, salt, black pepper, and cayenne pepper to the meat mixture, and mix well until all ingredients are evenly incorporated.
  4. Rinse the soaked casings under cold water and then slide them onto the sausage stuffer's nozzle.
  5. Carefully fill the casings with the meat mixture, being careful not to overstuff. Tie off the ends of the casings securely.
  6. Heat a skillet over medium heat and add a little oil or cooking fat. Once hot, add the sausage links and cook for about 4-5 minutes on each side until browned and cooked through.
  7. Remove the sausage links from the skillet and let them rest for a few minutes before slicing and serving.
