  • Ground venison - 400 grams
  • Pork fat - 100 grams
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Sea salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Apple cider vinegar - 1 tablespoon
  • Natural hog casings - 2 meters (if making links)

Steps

  1. In a large bowl, combine the ground venison and pork fat, mixing thoroughly with your hands.
  2. Add garlic powder, onion powder, smoked paprika, dried oregano, dried thyme, sea salt, black pepper, and red pepper flakes (if using) to the meat mixture.
  3. Pour in the apple cider vinegar and mix until all ingredients are well incorporated.
  4. If using hog casings, rinse them thoroughly and soak in water for about 30 minutes. Then, stuff the sausage mixture into the casings, twisting them into 15 cm links.
  5. For a patty version, shape the mixture into 4 equal-sized patties.
  6. Preheat a skillet over medium heat and cook the sausages or patties for about 15-20 minutes, turning occasionally, until they are fully cooked and reach an internal temperature of 70°C.
  7. Let the sausages rest for a few minutes before slicing or serving.
