- Ground venison - 400 grams
- Pork fat - 100 grams
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Sea salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red pepper flakes - 1/2 teaspoon (optional)
- Apple cider vinegar - 1 tablespoon
- Natural hog casings - 2 meters (if making links)
Steps
- In a large bowl, combine the ground venison and pork fat, mixing thoroughly with your hands.
- Add garlic powder, onion powder, smoked paprika, dried oregano, dried thyme, sea salt, black pepper, and red pepper flakes (if using) to the meat mixture.
- Pour in the apple cider vinegar and mix until all ingredients are well incorporated.
- If using hog casings, rinse them thoroughly and soak in water for about 30 minutes. Then, stuff the sausage mixture into the casings, twisting them into 15 cm links.
- For a patty version, shape the mixture into 4 equal-sized patties.
- Preheat a skillet over medium heat and cook the sausages or patties for about 15-20 minutes, turning occasionally, until they are fully cooked and reach an internal temperature of 70°C.
- Let the sausages rest for a few minutes before slicing or serving.
