Ingredients
- Venison steaks - 300 grams
- Cauliflower - 1 small head (about 400 grams)
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Zucchini - 1 medium, diced
- Onion - 1 small, diced
- Coconut aminos - 3 tablespoons
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - for garnish
Steps
- 1. Begin by marinating the venison steaks in a mixture of 1 tablespoon olive oil, coconut aminos, paprika, salt, and black pepper for at least 15 minutes.
- 2. While the meat is marinating, prepare the cauliflower rice by removing the leaves and stem from the cauliflower and cutting it into florets.
- 3. Pulse the cauliflower florets in a food processor until it resembles rice. Set aside.
- 4. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
- 5. Add the diced red bell pepper and zucchini to the skillet, cooking for an additional 5-7 minutes until the vegetables are tender.
- 6. In a separate pan, cook the marinated venison steaks over medium-high heat for about 4-5 minutes per side, or until they reach your desired level of doneness. Remove from heat and let rest for 5 minutes before slicing.
- 7. While the venison is resting, add the cauliflower rice to the vegetable skillet, stirring well to combine. Cook for 3-4 minutes until heated through.
- 8. To serve, divide the cauliflower rice and vegetable mixture between two bowls, top with sliced venison, and garnish with fresh parsley.
