Ingredients

  • Venison steaks - 300 grams
  • Cauliflower - 1 small head (about 400 grams)
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Zucchini - 1 medium, diced
  • Onion - 1 small, diced
  • Coconut aminos - 3 tablespoons
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - for garnish

Steps

  1. 1. Begin by marinating the venison steaks in a mixture of 1 tablespoon olive oil, coconut aminos, paprika, salt, and black pepper for at least 15 minutes.
  2. 2. While the meat is marinating, prepare the cauliflower rice by removing the leaves and stem from the cauliflower and cutting it into florets.
  3. 3. Pulse the cauliflower florets in a food processor until it resembles rice. Set aside.
  4. 4. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  5. 5. Add the diced red bell pepper and zucchini to the skillet, cooking for an additional 5-7 minutes until the vegetables are tender.
  6. 6. In a separate pan, cook the marinated venison steaks over medium-high heat for about 4-5 minutes per side, or until they reach your desired level of doneness. Remove from heat and let rest for 5 minutes before slicing.
  7. 7. While the venison is resting, add the cauliflower rice to the vegetable skillet, stirring well to combine. Cook for 3-4 minutes until heated through.
  8. 8. To serve, divide the cauliflower rice and vegetable mixture between two bowls, top with sliced venison, and garnish with fresh parsley.
