Ingredients

  • Honey - 1 tablespoon
  • Smoked paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes - 1/2 teaspoon (optional for heat)
  • Sea salt - 1 teaspoon

Steps

  1. Trim any excess fat from the venison and slice it thinly against the grain, about 1/8 inch thick.
  2. In a bowl, combine Worcestershire sauce, soy sauce, apple cider vinegar, honey, smoked paprika, garlic powder, onion powder, black pepper, red pepper flakes, and sea salt to create a marinade.
  3. Place the venison slices in a resealable plastic bag or a shallow dish and pour the marinade over the meat, ensuring all slices are well coated.
  4. Seal the bag or cover the dish and refrigerate for at least 4 hours or overnight for best flavor.
  5. Preheat your dehydrator or oven to 70°C (160°F). If using an oven, line a baking sheet with parchment paper.
  6. Remove the venison from the marinade and pat dry with paper towels to remove excess moisture.
  7. Arrange the venison slices in a single layer on the dehydrator trays or on the baking sheet if using the oven.
  8. Dehydrate for 4-6 hours, checking periodically until the jerky is dry but still slightly flexible.
  9. Once done, let the jerky cool completely before storing it in an airtight container.
