- Portobello mushrooms - 2 large
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cheddar cheese - 60 grams, shredded
- Avocado - 1 medium, sliced
- Romaine lettuce leaves - 4 large
- Sliced tomato - 1 medium
- Mayonnaise - 2 tablespoons
- Mustard - 1 tablespoon
Steps
- Preheat your grill or grill pan over medium heat.
- In a small bowl, mix the olive oil, garlic powder, onion powder, salt, and black pepper.
- Brush the mixture onto both sides of the portobello mushrooms.
- Place the mushrooms on the grill and cook for about 5-7 minutes per side, or until tender and slightly charred.
- During the last minute of grilling, sprinkle the shredded cheddar cheese on top of each mushroom to melt.
- While the mushrooms are grilling, prepare the burger assembly. On a plate, lay out two large romaine lettuce leaves as the base.
- Spread 1 tablespoon of mayonnaise and 1/2 tablespoon of mustard on each lettuce leaf.
- Once the mushrooms are done, place one on each lettuce base.
- Top with sliced avocado and tomato.
- Cover with another lettuce leaf if desired, and enjoy your Veggie Portobello Burger!
