Ingredients

  • Portobello mushrooms - 2 large
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cheddar cheese - 60 grams, shredded
  • Avocado - 1 medium, sliced
  • Romaine lettuce leaves - 4 large
  • Sliced tomato - 1 medium
  • Mayonnaise - 2 tablespoons
  • Mustard - 1 tablespoon

Steps

  1. Preheat your grill or grill pan over medium heat.
  2. In a small bowl, mix the olive oil, garlic powder, onion powder, salt, and black pepper.
  3. Brush the mixture onto both sides of the portobello mushrooms.
  4. Place the mushrooms on the grill and cook for about 5-7 minutes per side, or until tender and slightly charred.
  5. During the last minute of grilling, sprinkle the shredded cheddar cheese on top of each mushroom to melt.
  6. While the mushrooms are grilling, prepare the burger assembly. On a plate, lay out two large romaine lettuce leaves as the base.
  7. Spread 1 tablespoon of mayonnaise and 1/2 tablespoon of mustard on each lettuce leaf.
  8. Once the mushrooms are done, place one on each lettuce base.
  9. Top with sliced avocado and tomato.
  10. Cover with another lettuce leaf if desired, and enjoy your Veggie Portobello Burger!
