Ingredients

  • Whole wheat tortillas - 2 large
  • Eggs - 4 large
  • Spinach - 100 grams, fresh
  • Red bell pepper - 50 grams, diced
  • Cherry tomatoes - 100 grams, halved
  • Avocado - 1 medium, sliced
  • Feta cheese - 50 grams, crumbled
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Hot sauce - to taste (optional)

Steps

  1. In a skillet, heat the olive oil over medium heat. Add the diced red bell pepper and sauté for 2-3 minutes until softened.
  2. Add the fresh spinach to the skillet and cook until wilted, about 1-2 minutes. Season with salt and black pepper.
  3. In a bowl, whisk the eggs and pour them into the skillet, stirring gently to scramble. Cook until the eggs are just set, about 3-4 minutes.
  4. Warm the whole wheat tortillas in a separate skillet or microwave for a few seconds until pliable.
  5. To assemble the wraps, place the scrambled egg mixture in the center of each tortilla. Top with halved cherry tomatoes, sliced avocado, and crumbled feta cheese.
  6. Drizzle with hot sauce if desired, then fold the sides of the tortilla over the filling and roll it up tightly.
  7. Cut the wraps in half and serve immediately.
